French Onion Soup

6 cups thinly sliced onions (I don't cut them to thin, as they turn to mush then)
1 Tablespoon sugar
1/2 teaspoon pepper
1/3 cup vegetable oil (I use olive and eyeball it)
6 cups beef broth
8 slices French Bread ( I toast it first, this will get soggy pretty quick)
1/2 cup shredded Swiss cheese (or as much as you like)
In a Dutch oven or soup kettle over medium-low heat, cook onios, sugar, pepper in oil for 20 minutes or until onions a caramelized, stirring frequently. Add the broth;bring to boil. Reduce heat; cover and simmer for 30 minutes. Ladle soup into oven proof bowls. Top each with a slice of french bread and sprinkle with cheese. Broil until cheese is melted and serve.
Yield: 8 sevings (depending on the size of your bowl)

THAT'S the recipe I forgot to include in my menu plans! Oh golly...and I have all the ingredients...might have to make a substitution for Wednesday leftovers! Thanks for the reminder.
