This is a yummy, easy to throw together meal, especially when paired with a green salad, fruit, and some Butter Dips( recipe to follow).
Hot Chicken Salad
1 can cream of chicken soup
3/4 cup mayonnaise
1/4 cup diced onion
1 cup chopped celery (I usually skip this, as we're not big celery fans)
1 Tbsp. lemon juice
2 cups diced cooked chicken
1 cup cooked rice
1 cup crushed corn flakes ( I've also used crackers, chips, french fried onions, almonds, whatever I have on hand)
3 Tbsp. butter or margarine, melted
In a large bowl, combine soup, mayo, onion, celery and lemon juice. Fold in chicken and rice. Turn into greased casserole dish.
Combine corn flakes and butter. Sprinkle over chicken salad. Bake at 350 for 30 minutes.
