Cinnamon Doughnut Muffins



These are quite yummy, and if you are reading this in the AM, would be very quick to whip up for breakfast, and a darn sight better for you than what I'm having right now- coffee and candy corn. (I just wanted a breakfast where everything started with "C". Are you buying that? I didn't think so.)

I made them to go with supper the other night, and I think I might make them again for tonights supper- Deep Dish Hunters Pie and salad.

OK , enough talking, here's the recipe:


1 3/4 c. flour

1 1/2 tsp. baking powder

1/2 tsp. salt

1/2 tsp. ground nutmeg

1/4 tsp. cinnamon ( don't be tempted to add more- you dip the finished muffin in cinnamon sugar)

3/4 c. sugar

1/3 c. oil

3/4 c. milk

1 egg, lightly beaten

Jam

Topping:

1/4 c. melted butter

1/3 c. sugar

1 tsp. cinnamon


In a large bowl, combine the first 5 ingredients. Combine sugar, oil egg, and milk in another bowl. Stir into dry ingredients just until moistened.

Fill greased or paper-lined muffin cups half full; place 1 tsp. jam on top, cover with enough batter to fill 3/4 full. Bake at 350 for 20-25 minutes, or until muffins test done.

Melt butter in small bowl, and combine cinnamon and sugar in a separate bowl.

Immediately after taking muffins from oven, dip tops in butter, then in sugar.

Serve warm.

Yield:10, but I squeaked 12 out.

Ummm, you're making me hungry. I wish I had one of those right now. But unfortunately I just mopped the kitchen so I can't go in there right now :(

What is Hunters Pie? You always have new delicious sounding recipes that I've never eaten and I was wondering where you get your inspiration.

Those look delcious -- did you use your own jam? Do you make dessert every night? We used to, but now I only do for special occasions, as it was just too tempted to pick at the sweet things and ignore the rest!

New Mom- most of my recipes come from Taste of Home magazine.
THe hunters pie is made with venison.

Morning- I go through spirts, sometimes I make alot of dessert, then I stop.
The jam was one that I made!
